Coconut, Lime & Chickpea Curry

Serves 3-4
Ingredients:
1 tbsp coconut oil
1 tbsp grated or finely chopped fresh ginger
3 cloves garlic, minced
1/2 large red onion, thinly sliced
1 1/2 cups cauliflower, chopped
1 cup broccoli florets, chopped
1 cup bite-sized torn spinach
1/2 tsp curry powder
1/2 tsp turmeric powder
1/4 tsp ground cumin
1/4 mild chilli, finely sliced (or 1/2 tsp dried chilli flakes)
1 cup chickpeas
1 tbsp lime juice
1/2 cup fresh cilantro (coriander)
Method:
1) Heat a frying pan to medium high.
2) Add the coconut oil, ginger and garlic. Lightly stir fry. Ruduce heat to medium-low.
3) Add curry, turmeric, cumin, chilli pepper and vegetables, chickpeas, and coconut milk.
4) Cover and cook for 5 minutes.
5) Add lime juice and cilantro.
6) Serve with quinoa, brown rice or buckwheat.
