Black-Eyed Bean Burger

Ingredients:

400g/14oz can black-eyed beans. drained

1 small red onion, finely chopped

1 spring onion, finely chopped

1 clove garlic, crushed

2 tablespoons fresh coriander, chopped

6 large mushrooms, sliced and lightly sautéed

dash Tabasco sauce

dash tamari

sea salt and freshly ground black pepper

2-3 tablespoons oil

Method:

Lightly mash the beans and mix all the ingredients except the oil together.

Heat the oil in a pan.

Shape the bean mixture in the palms of your hands to shape 4 medium sized burgers.

Fry on one side until brown and crisp, then turn and fry on the other side.

Serve on a bed of fresh green salad with slices of tomato and red onion.
